Kale, Bean and Sausage Soup Increase your intake of plant foods, including dark green kale and garbanzo beans, and you may reduce your risk of heart disease, a concern when you have type 2 diabetes. INGREDIENTS Cooking spray 1 small onion, chopped 1 small carrot, peeled, sliced 1/2 -inch thick 1 (3-oz.) sweet Italian chicken sausage link, sliced 1/4 -inch thick 3 c. reduced-sodium chicken broth 4 c. coarsely chopped kale (tough stems removed) 1 (15-oz.) can no-salt-added garbanzo beans, drained 1 /2 tsp. ground cumin 1 /8 tsp. pepper DIRECTIONS Spray large pot with cooking spray. Add onion and carrot. Cook 5 minutes over medium heat stirring occasionally. Add sausage; cook 1 minute. Stir in 1 cup broth. Add remaining broth, kale, beans, cumin and pepper. Bring to boil. Reduce heat to low, cover; simmer 45 minutes. Makes 4 (1 1/2 -cup) servings.
