he Sunshine State has the longest coastline in the lower 48 states,
with about 1,350 miles. It's also the only state that borders both the
Gulf of Mexico and the Atlantic Ocean. That means lots of great seafood options-everything from beautiful red snapper to our local
rock shrimp.
Rock shrimp is a great choice with its mild, sweet flavor, much like spiny
lobster. And the shrimp can be prepared many ways. But take care: They cook
more quickly than regular shrimp.
Once you've marinated your rock shrimp with this recipe, you'll be ready to
broil, sauté or grill them.

2 Florida oranges, zested and juiced
3 Florida limes, zested and juiced
2 tbsp. coconut oil
1
/2 tsp. salt
2 gloves garlic
a pinch red pepper flakes
2 lbs. rock shrimp, peeled and deveined
(you can do this yourself or buy it
already cleaned)
1. in a blender, combine the orange and
lime juice plus the zest from each with
the coconut oil, garlic, salt and red
pepper flakes. don't add too much
salt, as the shrimp will easily absorb it.
2. Place shrimp in a plastic zipper bag and pour in the marinade. Make sure the
shrimp are completely covered, close the bag, and let marinate about 20 minutes. don't leave them in the marinade too long-the citrus may begin to cook
the shrimp (that's how ceviche is made).
Yield: 6 servings.
How to Zest Citrus Fruit
First, wash the citrus well. remove the colored part of the rind only, avoiding the bitter white pith. For strips, use a vegetable peeler. For grated zest,
use a specialized grater.
