Let’s Grill s summer approaches, barbecues become popular, whether you choose to heat things up on a charcoal or a gas grill. Most meat and seafood can be grilled outdoors. Meat that is lower in fat is healthier and easier to cook than higher-fat meats. When heated, fat melts and drips onto the coals or gas jets, often resulting in a flame, which quickly burns the meat, turning it to charcoal. Lean cuts cook much more evenly. Some general grilling tips are I Be sure meat is thawed before grilling (otherwise the middle will not reach the necessary temperature). I Marinate meat in the refrigerator. I Put aluminum foil or a grilling pan under the meat, which contributes to even cooking without surface charring. I Pay attention to the grill temperature; it can change quickly. For thorough cooking, 350 degrees to 400 degrees works well. For broiling or surface searing, a hotter temperature might be necessary. When grilling at a high heat, be sure the food cooks through.
