The meat and beans in basic chili recipes provide protein, and the beans also provide fiber. Tomato is a good source of vitamin C, while onions, garlic, and peppers have various positive health effects. When made with lean meat, chili is very low in fat and relatively low in calories. The most common meat found in chili is browned ground beef, but cubed and chopped meats also will do. Canned beans are a lot faster and easier to use than dried beans. Many recipes call for red kidney beans, but other types can be used. Different forms of tomatoes will work. Spices are key to a chili’s flavor — but chili doesn’t have to be hot and spicy. Vary the amount of chili powder to accommodate more sensitive palates. Hearty chili usually contains chopped onions, minced garlic, and chili powder. Some cooks add extra cumin and oregano.
