For the Little America Hotel in Flagstaff, Arizona, USA,
transforming its dated Western Gold bar and restaurant into
an all-day destination for guests meant catering to two very
distinct sets of diners.
"In a hotel environment, the bar doesn't want to function
as an alcoholic bar in the morning," says Robert Olsen,
project manager, Denton House Interiors, Salt Lake City,
Utah, USA. "It wants to be more of a place where people sit
and watch the news and have juice and pastries. And in the
evening, it wants to be a bar-bar with sports games going on
and different clientele sitting there."
To walk that line, Olsen and his team at Denton
House created a place that could move with ease between
two personalities. "We designed the bar so that it could
transition to a breakfast pastry and coffee environment
by focusing the central portion of the bar on a large
cappuccino machine," he says. "We also added removable
doors that cover the liquor cabinet displays. Pastry cases
can be brought out in the morning to create a café-type
space, and the bar area can easily transition in the evening
to a more traditional bar environment."
The team used stool seating near the bar to create

a lounge space and buffer between the bar and main
restaurant space. "The scale of the lounge area stools and
tables are balanced between heavy dining furniture and
delicate café furniture," Olsen says. "This scale allows
the space to feel appropriate for both the breakfast and
evening clientele."
Olsen and his team worked to make the space more
inviting, no matter what time of day. The bar and restaurant,
once dark and dreary, was completely opened up to give it
more light. A brighter color palette was implemented to
make it more comfortable.
The redesigned restaurant reopened in June with a new
name-the Silver Pine Restaurant-and a new attitude.
Special details were added that speak to the culture of
the region, including historical prints of Flagstaff, custom
designed area rugs, broadloom carpet, and a custom mosaic
pattern that adorns the bar area floor.
The new look harmonizes with the rest of the hotel-
which was also recently given a face-lift-even though the
real character language of the restaurant is its own concept,
color scheme, material palette, and space, says Olsen.
"Everything feels fresh compared to how it was."
