Whereas the popular Flatiron District spot sends its few nightly leftovers to a compost pile, Rubin’s latest effort—neighborhood shops called Birdbath Neighborhood Green Bakery—is minimizing heaps of landfill. Birdbaths’ interiors are a recipe of sustainable ingredients. Eco-friendly innovations include electricity-sipping light bulbs and non-toxic paint made in a factory that uses low-energy machinery. Meanwhile, recycled-paper shelving and walls transformed from wheat cozy up to recycled materials of a more vintage sort: reclaimed lumber floors, vintage wallpaper, tin ceilings, and a staff outfitted in 1950s frocks. With East and West Village shops already spreading the sweet word, Birdbath is set to open in Riverhouse, its third outpost and the “first location to have firm geographic boundaries within which we’ll procure building materials—Maine to Florida, and no further west than the Mississippi,” Rubin says. The Riverhouse hangout will also incorporate—more recycling—leftover materials from the first two Birdbaths. Regardless of where you find a Birdbath, Rubin also gives patrons a delicious reason to live green themselves: Roll up on a bicycle or skateboard and you’ll be rewarded with a 25 percent discount on goodies ranging from apricot-filled (Save the Polar) Bear Claws to buttery What’s Your Carbon Footprint? Even if you don’t know anything about the toxicity of perchloroethylene and hydrocarbon solvents, just catching a whiff of a typical dry cleaner will get you thinking that something’s not quite right with the process. Green Apple Cleaners lets you breathe easy in your cashmere. The concierge service –only company founded by David Kistner (left) deploys naturally occurring carbon dioxide to scrub your duds. Specifically, it uses “food-grade CO2 from the same people who carbonate club soda and soft drinks,” says Kirstner’s partner Stavros Michailidis. “Also, our process is carbon-neutral because the CO2 we use is captured from the environment and we do not add any new CO2 to the atmosphere. Plus we recycle and reuse up to 98 percent of it.” Green Apple's services, which will soon be available at Riverhouse, treats clothes right, too. Kistner promises the least agitation and no odor.
