Spirit Magazine - December 2013 - (Page 26)

WATCH THE RYE powered by TASTE TEST I read the article "Chomp, Chomp" in your September issue. While I enjoyed it, you printed something misleading. The Chocolate Salted Rye Cookies from Tartine Bakery in San Francisco are not gluten-free if they contain rye flour. Rye is a member of the wheat family, and rye flour definitely has gluten. A person with celiac disease or a gluten intolerance would get sick from eating this. I hope the bakery isn't misleading their customers about the ingredients in their products. I took a peek at your September issue during those "non-electronic" minutes from when the door is closed to 10,000 feet. Usually I start working or doing something else when allowed to use electronic devices again, but I couldn't put this issue down and found myself feeling like the Cookie Monster. I wanted to eat every cookie pictured or described! Then I realized that all the recipes were available online (spiritmag.com/cookies)! Upon returning home, I printed out the entire booklet and began testing. I've often said your magazine is the best of all the airline magazines, but it just keeps getting better and better. Thanks for giving us all something fun to do during those non-electronic minutes and throughout the flight. Spirit is just another great thing about a great airline! -ROBIN SMITH DENVER Thanks for the heads-up, Robin. You're absolutely right; both wheat and rye flour contain the gluten protein. People with celiac disease, an immune response to gluten, should avoid those cookies. On the other hand, some people simply have trouble digesting wheat; they can give the cookies a try. I was particularly interested in the one for Oatmeal-Coconut Butter Cookies from Australian chef Curtis Stone since those three ingredients are found in the iconic Australian Anzac biscuit. ("Biscuit" is the term used for "cookie" in Australia.) Sure enough, the two recipes are very similar. Anzac biscuits were sent to men fighting as part of the ANZAC (Australia and New Zealand Army Corps) forces overseas during World War I. They are hard cookies designed to travel well through the mail and provide troops with carbohydrates for energy. This interesting history is an extra "ingredient" of Curtis Stone's cookie recipe, which makes it that much more special. -S A R A D O W N E S ARLINGTON, VIRGINIA Wow, that is interesting, Sara. It's rare that a confection designed for warfare would make a great, um, biscuit.  - C H R I S T I N E W I L L I A M S HOUSTON We love it when a reader mentions spiritmag.com! Thanks for noting the recipes online, Christine. SPIRIT SWIPER I do not often read magazines while waiting in public places because most of them are simply advertisements for trends, fashion, supermodels, American idols, celebrities, and elites. When I, rather indifferently, reached for Spirit on a recent Southwest flight, I was surprised to find that my eyes were glued to pages filled with interesting subjects and personal stories. However, one hour on the airplane is not enough time for me to read all that Spirit provides, which is why I always steal it to take home with me. -A N H T H A O B U I S A N J O S E , C A L I FO R N I A We're glad you stuck with us, Anhthao.
