He stirs together cognac, orange curaçao, maraschino
liqueur, lemon juice, and Angostura bitters with cracked
ice, then pours the chilled combination over an entire
lemon peel. Alongside this, he serves me his on-the-spot
interpretation of the original crusta, blending pisco, lime
juice, Clément Créole Shrubb (a spiced blend of rums
from the island of Martinique), Cherry Heering, and
orange bitters. Santini's version is the embodiment of
harmony and tension: slightly acidic, moderately bitter,
and more than a little sweet. Hannah's adaptation counterbalances the balance, using soft flavors to match the
boldness of cherry and orange.
The sublimely bracing contrast between the two drinks
