" Ingredients 6 tilapia fillets; sea salt; ground black pepper; ¼ t ground cumin; 2 limes; 2 mangoes peeled, pitted and cubed; 2 slices pineapple, cubed; ½ C finely chopped red onion; ¹⁄³ C chopped cilantro leaves; 1 T olive oil; 2 T rice vinegar; 1 t minced ginger; 1 red, 1 yellow, 1 green bell pepper, stemmed, seeded and sliced into rings; 1 C sliced zucchini. 6 servings (220 cal., 1.2 g saturated fat per serving) Directions Season tilapia fillets with sea salt, pepper, cumin and the juice of one lime. Marinate 30 minutes in refrigerator. To prepare the mango salsa, place the mango, pineapple, red onion, cilantro, olive oil, rice vinegar, ginger and the juice of the remaining lime in a glass bowl and mix thoroughly. Season the bell peppers and zucchini with salt and pepper. Spray a skillet with cooking spray and sauté the vegetables. Coat a separate skillet with the spray and cook the fillets over high heat for 5 to 7 minutes, turning halfway through. Serve the fish topped with the salsa, with vegetables on the side.
