There's laughter and clinking glasses in the intimate dining room. A practiced angler delivers a plate of tender, crispy Bang Bang Shrimp®. Behind the bar, a grinning mixologist prepares a Cold Snap Cosmo - smallbatch Icelandic Reyka vodka, Solerno (a blood orange liquor), and fresh blood orange juice. He shakes a tumbler vigorously before pouring the chilled liquid into a glass made entirely of ice. It's garnished with a slice of blood orange, and served with a mitten. At Bonefish Grill, freshness is the focus and "polished casual" is the approach. The menu is crafted with the best ingredients from around the world. Think PretzelCrusted Tuna and a Shareable Mixed Grill of succulent salmon, shrimp, scallops, and sirloin. The drink menu comple- ments the food, both in quality and style. "We take a culinary approach to our bar," says Leigh Merritt, director of beverage innovation. "We use fresh ingredients and infusions, and keep the steps simple." Try the Fresh Raspberry Martini, and you'll see what Merritt means. "There's none of that artificial 'razzmatazz flavor,' " she explains. "The key is to keep it as straightforward as we can, and to maintain great training. We pour test each of our bartenders every day, so that we have the same taste in Michigan as we have in Florida."
