Prepare yourself for a remarkable phenomenon in spirits: high-quality craft liquors made in the U.S.A. By Nick Passmore Half a dozen active distilleries in Brooklyn? Yes, I had a hard time believing it, too. But it’s true — and most of them opened within the last three years. Plus, there are more than a dozen distilleries in or around Portland, Oregon. And more are popping up across the country. So what’s going on here? Prohibition redux? Absolutely not! They’re all duly licensed. Honest. These establishments are part of an entirely new class of businesses: craft distilleries. And their number is growing exponentially. It’s not just a trend; it’s a tsunami of gin, vodka, rum, whiskey, and even absinthe. Growing out of the craft-brew movement and boutique winery business, and feeding America’s appetite for local, artisanal produce, craftliquor distilling has seen ten-fold growth in the last decade, from about 25 in 2001 to 250 today. To understand what’s going on here we talked to three prominent figures in this emerging industry. ★ Tito Beveridge: Six Times a Charm Like many of the players behind craft distilleries, Tito is a maverick. “I’ve never gone to distilling school,” Tito says. “Hell, I don’t know what people think the right way is to do it. All I know is what I do. I’m just a self-taught distiller.” Like several of the early craftdistiller entrants, he was inspired by microbreweries and boutique wineries. “I started thinking what it would be like in the distilled spirits business if you did a micro thing,” Tito says. “So back in ’93 or ’94, I built a little 16-gallon pot still from scratch.” He worked day and night in a one-room distillery shack that he hand-built, cooking vodka and catching sleep whenever possible.
