He runs the still at a very low temperature, which results in an exceptionally clean, fresh flavor. Then there’s Ethereal, a series of experimental gins whose formulas change with every batch. These he describes as “new-age nonconformist gins that don’t necessarily come over as juniper-forward. They’re sort of wild-card gins.” The current version came about because his marketing person wanted something with blueberries in it. “I double-distilled the gin, and it was a little muddled around the edges. So I took out the coriander and added some more citrus stuff like lime peel and citric acid–type berries like rose hips and elderberry and blueberry.” The result is light, fresh, tangy, and full of flavor. Weld relishes the freedom he enjoys as a craft distiller. “I don’t have a bean counter over my head. If something seems neat, I go for it.” He could be speaking for the whole industry when he observes, “We’re producing newer types of spirits that haven’t been out there. It’s risky to reinvent the wheel — there’s going to be a lot of bad products. But when this shakes out there’ll be some interesting stuff.
