You and your guests will be happy (guaranteed!) with any of these great recipes. by Nick Passmore ★ Who better to celebrate the holidays with cocktails than Americans? After all, the U.S. is the birthplace of the cocktail. And there’s no better time for the spirits to lift our spirit than the dark midwinter evenings between Thanksgiving and the new year. It’s the time of year to resort to the comfort and coziness of cocktails made with apples, pears, eggs, and cream, and to infuse them with warming, earthy spices such as cinnamon and nutmeg. Cory Sullivan, bar manager at Union Square Cafe in New York City, is a fervent advocate of spiced holiday drinks. “I love using spices like cinnamon, nutmeg, cloves, and even anise in cocktails around the holidays,” he says. “You can make syrups with any of them, put them right into the drink, or use them to make various cool garnishes. The smell alone evokes strong memories of the holidays for me, and I think that goes for most people.” You’ll find this spiced theme running through the cocktail recipes presented here, especially in Sullivan’s own Apple Turnover. Laird’s Applejack 2 tbs. demerara simple syrup 2 tbs. Luxardo Maraschino 1 tbs. lemon juice 1 dash orange bitters 1 dash Angostura bitters 1 pinch of powdered clove stir ingredients with ice and strain into chilled glasses. garnish with cinnamon stick. Serves two Pomme d’Or Apple-based ingredients provide the perfect foundation for holiday cheer. 1 1/2 oz. Plymouth Gin 1 oz. Roger Groult 8-year-old Calvados 2 oz. Pink Lady apple juice 2 tsp. lemon juice 2 tbs. rosemary-vanilla syrup white of half an egg combine all ingredients with ice and shake well. serve in well-chilled martini glasses.
