Beefeater Gin soda water place lemons and grapes in large bowl. cover with lychees and pour in lemon juice, pomegranate juice, riesling, and gin. leave to steep in cool place for 30 minutes. When ready to serve, add blocks of ice and top with soda to taste. Tito’s Handmade Vodka 3 oz. Rothman & Winter Orchard Pear liqueur, or similar (such as Mathilde Poire) 1 oz. fresh-squeezed lemon juice 2 tsp. St. Elizabeth Allspice Dram combine ingredients in mixing glass and shake vigorously with ice to chill. strain into chilled cocktail glasses and garnish with fresh slice of pear or lemon twist. Serves two Christmas Apple Martini A whole new take on flavored vodka 12 oz. vodka 2 apples, cut into small pieces 1 piece star anise 1 pinch freshly grated cinnamon 1 pinch freshly grated nutmeg 1 clove marinate all ingredients together in a sealed jar for three days, shaking occasionally. strain through cheesecloth into shaker filled with ice. shake well and pour into chilled martini glasses. Serves four Real Eggnog A whole different experience from the off-the-shelf stuff, and well worth the effort 6 eggs, separated 2 cups heavy cream 1 cup sugar 3/4 cup light rum 3/4 cup bourbon 1 qt. milk Whip egg whites until stiff, set aside. Whip cream, set aside. place egg yolks in large bowl and add sugar while beating slowly until creamy. add rum and bourbon, beat a minute more. add milk and beat. fold in whipped cream and then beaten egg whites. beat very gently at slow speed until egg whites are broken up and mixture is still foamy. garnish with grated nutmeg and a sprig of mint. Makes 12 one-cup servings Camus Spice Cognac is a natural vehicle for winter spices. 6 oz. Camus VS Elegance Cognac 4 tbs. maple syrup 3 oz. lime juice orange wedge in shaker grated cinnamon combine liquid ingredients with ice. rim two chilled martini glasses with orange wedge, squeeze juice into shaker, and drop in wedge. shake well and strain into martini glasses. garnish with cinnamon. Serves two Absinthe Flip An after-dinner drink to enjoy as an adult alternative to eggnog 2 oz. Pernod Absinthe 2 oz. vodka 2 tbs. simple syrup 3 oz. light cream 1 egg yolk grated nutmeg shake liquid ingredients over ice and double-strain into well-chilled martini glasses. sprinkle with grated nutmeg. Marmalade’s distinctive bittersweet tang gives this drink an unusual twist. 2 oz. London dry gin 3/4 oz. Cointreau 3/4 oz. fresh lemon juice 2 tbs. orange marmalade add all ingredients to shaker with ice. shake and pour through fine strainer into chilled martini glasses. garnish with orange twist. Serves two Spicy Pears The combination of the absinthe and elderflower make for a most distinctive cocktail. 1 tsp. Pernod Absinthe 4 oz. Absolut Pears 2 oz. St. Germain 2 tsp. lime juice shake ingredients over ice and strain into a martini glass.
