By “contemporary,” Pryor means eschewing the nouvelle cuisine of the ’80s and the heavy French sauces of the ’70s. And he should know, being a graduate of the Ecole Ritz Escoffier in Paris and the former executive chef of the famed French brasserie Orsay. Now Pryor loves the focus on seafood at the Sea Fire Grill, and the “ability to go out and find the best quality we can.” Meat lovers take heart; that applies to steaks, too. “We dry-age it ourselves in-house and it’s absolute prime,” Pryor says. Just ask chef Ted Pryor, who hand-selects every piece of fish himself. “Our biggest seller by far is the wild Alaskan halibut,” Pryor says. “A lot of what’s out there is farm-raised, and that’s just not good quality. When we can’t get the wild, we take it off the menu.” Pryor serves the fish in a lemon-butter sauce with three grilled asparagus — part of his food philosophy “to let the protein shine” and not overcomplicate dishes. “I had a large family with a large garden, and we went to the coast for seafood,” Pryor recalls growing up in Westchester County, New York. “My focus is using the freshest ingredients and preparing them simply.
