over an open fire comes from one of the few remaining herds of pigs like those eaten in the era of Washington and Jefferson: small, round animals with about three inches of fat for every inch of meat. The historic breed comes from an island off of Georgia where they were likely left by the Spanish in the 1500s. Each year, Colonial Williamsburg raises six to ten piglets from a sow now at Mount Vernon. These become the slabs of bacon and hunks of ham that are cured in salt and then smoked, just as they were two and a half centuries ago. The silver in the historic homes is polished with chalk in a slow, laborious process. The sheen is dim compared to what you’d get with modern compounds, but that’s how it was done in the late 1700s, so that’s how it’s done now. The builders use crosscut saws and make pass after pass with hand planes to create the siding for the armory being built on the site where archaeological research has revealed the forges that made military equipment for the Revolutionary War. More recently the organizers recognized a problem: The buildings they’d moved in were the well-built ones, the ones that had survived, and the houses of the poor had long ago crumbled. Most of the other buildings were moved from elsewhere, and many objects are carefully researched reproductions, but that’s why you’re free to touch them. “We encourage complete immersion in all of our activities,” says Lynelle Mellady, public relations manager. “We want guests to roll up their sleeves and help the facilitators knead the bread in the kitchens or go to the Civil War segment and learn to shoot with the Civil War–era army.
