T he Olive Tree Italian Family Restaurant was a concept inspired by the owner’s childhood home on the family olive grove and vineyards. Growing up with the freshest local ingredients and making their own olive oil and wine, Nick Hapsis  knew he wanted to share that kind of unique dining experience. He and his wife, Kaliopi, started on their venture of making his dream a reality. Aberdeen, Md. is where it all began in 1992. When it opened at 1005 Beards Hill Road, The Olive Tree was a modest affair – 10 bar stools and 8 booths – a far cry from a corporate-like setting. Nick and his wife spent seven days a week, 16 hours a day at the restaurant making sure that every guest had a great dining experience. The restaurant quickly developed a reputation among its patrons for offering freshmade pasta, homemade authentic Italian dishes and phenomenal seafood the locals love. We learned how to make pasta using the pasta machine, which was in the lobby and on display for guests to see. People still recognize us as the little kids at the Olive Tree!” The privileged coastal locations in Maryland makes fresh seafood readily available.
