"I've been lucky two times," says Giuseppe Manco,
winner of the Pan Division at Pizza Expo 2017. He also
finished first in the Italian-Style Division in the 2014
International Pizza Challenge in Las Vegas.
But luck may be less a factor than Manco's pizza
heritage. Born in Naples, Italy, he learned pizza making
at the restaurant his family owned there before arriving
in New York at age 23. Now 30 and with 17 years of
experience at the ovens, he won over the judges in
March with his Regina Pizza al Taglio.
The pizza maker was working then at Prova Pizzabar
in New York City (owned by Donatella Arpaia) and
now is opening two locations of his own, calling them
Mani in Pasta Pizzeria Romana. He brought his dough
and his own micro basil to the Las Vegas competition,
then made his sauce onsite in the Pizza Challenge prep
area. His dough ferments 32 to 96 hours and has high
hydration. "The one I make is 90 percent," Manco says.
"That gives it the lightness and the high digestibility."
He prebakes the crust, opens it to fill the tray and
then puts it back in the oven for 8 - 10 minutes before
letting it rest on a screen "until the smoke doesn't
come out." Then he adds pecorino Romano and cherry
tomatoes, bakes another 5 - 6 minutes and finishes
with buffalo mozzarella and the micro basil.
"With that kind of pizza you can do a lot of gourmet
toppings and do it very fancy," says Manco. "I decided
I don't need that."
The judges agreed, and awarded him first place and
a $4,000 winner's check in the Pan Division, which is
typically filled with contestants baking up elaborate
recipes.
Manco finished third in the Pizza Maker of the Year
finals in 2014 and second in 2017. He plans to come
back to make another run at that ultimate title, perhaps
as soon as next March.
