HISTORIC SIGHTSEEING A great way to see the sights on St. Kitts is the Sugar Train, which originally carried sugar from the plantations to the factory. The two-hour scenic tour circles the island, taking in abandoned windmills and sugar estates backed by Mt. Liamuiga. The imposing Brimstone Hill Fortress, built by slaves in the 1600s, is an UNESCO World Heritage site and offers views of neighboring islands. Santo Domingo, Dominican Republic, is the oldest city in the New World and its Colonial Zone is a UNESCO World Heritage Site. Boiling Lake, the world’s largest at 200 feet wide, steams with 190degree water. There are also bubbling mud fields, 150-foot waterfalls, monkeys and endangered parrots to see on mountain trails. Parc Naturel on Guadeloupe, a UNESCO World Biosphere Reserve and one of the Caribbean’s largest parks, features waterfalls and hundreds of trails. Carbet Falls crashes over 800-foothigh cliffs on its way down from 4,815foot La Soufrière volcano. There are 12 trails to The Quill, a 1,968foot extinct volcano on St. Eustatius. Inside the volcano crater is a tropical rainforest hosting 50 bird species, including the rare blue pigeon. TENNIS Nick Bollettieri, Andre Agassi’s trainer, designed the tennis facility and instruction program at the Ritz-Carlton, Grand Cayman. The new Anguilla Tennis Pavilion on Anguilla features seven courts built to U.S. Open specifications, while the St. Lucia Racquet Club, with its nine floodlit courts, has hosted Davis Cup matches. In fact, on Anguilla, many restaurants import their chefs from Paris as well as their ingredients. This tiny island has over 70 restaurants — more per square mile than Manhattan. An extraordinary epicurean opportunity is offered at Royal Plantation in Jamaica. The Art of Sabrage features champagne opened by saber, which is served with Iranian caviar, followed by a multi-course meal with paired wines. Cobblers Cove in Barbados has a seafood and caviar dinner each Friday, offering guests caviar with chilled vodka, and an opportunity to select their own fish from an iced fish market, which is then prepared by the chef.
