Machine placement also is a factor, said Garth Pearson, marketing manager, Scotsman Ice Systems. “A lot of ice machines are in closed rooms with vending machines,” he said. “Soda machines generate a lot of heat and the machines make a lot of heat when they’re in an enclosed space, which makes them work harder.” The Serenity Series has a one-piece, stainless-steel design, which allows for easy installation and serviceability. HOSHIZAKI face LIFTS In June, L’Auberge Del Mar Resort and Spa will have a fresh look. The historic property, managed by Destination Hotels & Resorts, is undergoing a $25-million renovation, including a new restaurant, spa and remodeled guestrooms. A new lobby will include dark wood floors and white beamed ceilings; the new lobby bar will feature a wine and cheese barista; and more than 12,000 square feet of indoor and outdoor space will be transformed. The New Yorker Hotel, New York, launched a $65-million renovation project to restore its art deco reputation and add modern style. The project, to be completed by August, includes: installation of a new heating and airconditioning system; overhaul of furniture, carpets, wallpaper and fixtures in guestrooms and hallways; lobby redesign; a facelift of the front of the hotel on Eighth Avenue; guest services enhancements including free Wi-Fi service; and an upgrade and refurbishment of the restaurants (La Vigna Ristorante & Bar and the 24hour Tick Tock Diner). The Atlanta Marriott Marquis is under way with its $138-million renovation. Additions include three food-and-beverage venues, the MStore gourmet deli and sundries shop and an on-site Starbucks. Renovations completed include 1,663 guestrooms and 94 suites; expansion of the concierge lounge; the addition of eight meeting rooms; remodeling of the Imperial Ballroom and 15 meeting rooms; remodeling of 12 breakout meeting rooms; and a new indoor/outdoor pool. When a customer comments, “My machine won’t keep up,” it’s usually time for spring cleaning, said Danny Moore, director of technical support, Hoshizaki America. “Ice machines separate minerals from ice,” Moore said. “In that process they get scaled up. Descaling reduces mechanical problems.” More frequent cleaning might be needed for areas with bad water, he said. Keeping condenser coils clean and dust-free also will ensure efficiency. “Productivity can go down if air flow is impeded,” said Mike Rice, product marketing manager, Follett Ice, who recommended Banish bacteria Ease of cleaning is a major consideration when purchasing an ice machine. “How easy it is to clean often will be an indicator of how often an ice machine gets cleaned,” said Mike Rice, product marketing manager, Follett Ice. The company’s Horizon ice machines feature pushbutton cleaning. Another aspect is the ice dispenser. Satellite-fill delivers ice through a tube. “With the dispensers, The icemaker mounts anywhere to locate you have sugar and syrup it out of the customer’s view. [from soda] and other areas of contamination,” Rice said. One option is a technology called satellite-fill, which allows the icemaker to be installed away from the dispenser. This avoids problems related to ice being dumped into a dispenser from its point of storage. It is also an alternative to an icemaker being positioned on top of a dispenser. That configuration has two shortcomings, Rice said. “With an icemaker on top of a dispenser, it’s difficult to clean without straining or injury from moving heavy equipment, and it’s difficult to clean thoroughly in terms of getting access,” he said. Improve ice machine performance Have a qualified ice machine technician install the machine. About 25 percent of issues with ice machines are installation-related and therefore avoidable. All ice machines should have a filter on inbound water. Up to 70 percent of problems are related to water. Each ice machine should have scale-reducing filtration to reduce the mineral buildup in the ice machine, which extends time between cleanings. As machines get older, consider replacing with new, more energyefficient machines, which can save 25 percent on electricity usage over older equipment. Monitor water temperatures It is not uncommon to find water temperatures of more than 90 degrees feeding an ice machine in midsummer, said Danny Moore, director of technical support, Hoshizaki America. “Temperatures of 100 degrees have been reported in south Texas and Arizona in midsummer,” he said. “That’s the cold water temperature.
