The Grand Hyatt DFW in the international terminal of the Dallas-Fort Worth International Airport recently added granola, yogurt and fruit parfaits to the grab-and-go case in its café. While its Moka café—which offers specialty coffee drinks, light breakfast and lunch foods—already included breakfast pastries, sandwiches and wraps in its case, it recently added healthier items to appeal to more guests. “We’ve evolved the display items here to try to titillate customers. That customer who would be taking a coffee to go can take something else that they can grab and go,” said Andrew Davidson, g.m., Grand Hyatt DFW. The parfaits, which face LIFTS Swissôtel Chicago completed the first phase of its $20-million guestroom renovation, unveiling 538 of its 632 rooms. The rooms feature technology docking centers, 37-inch plasma televisions and frameless glass shower stalls. A $5.5-million renovation of The Dearborn (Mich.) Inn, a historic Marriott Hotel founded in 1931 by Henry Ford, was completed in June. The new design reflects its history but features modern technological amenities. Sheraton Universal, Los Angeles will debut a $30million renovation in July. It is the first major renovation to the “Hotel of the Stars” since 1978. retail for about $4.50 each, have sold well, partly because of their beautiful presentation, according to Davidson. “In varying ‘to go’ establishments, you see products that look like they have been sitting in the same vessel for the last several hours. The bright green kiwi and other fruits make the parfaits look absolutely beautiful, and they are more apt to sell,” Davidson said. The Peabody Orlando boosted sales from its diner’s grab-and-go case by adding plastic bottles of Republic of Tea beverages and 375-milliliter bottles of wine. The hotel sells about 36 wine bottles from the case per month. The 5-foot glass case at the front of the Peabody’s B-Line Diner also features an array of desserts, salads, sandwiches, energy drinks, sodas and other items. The diner’s B-Line Express window and glass case already were popular with guests attending a meeting, leaving for a flight or just wanting to pick up a quick meal and beverage to take back to their room. “We do about $700,000 worth of revenue out of the window a year,” said John Askew, food-and-beverage director, The Peabody Orlando. THE PEABODY ORLANDO Landmark property Renaissance Dallas Hotel will debut its 514 renovated guestrooms this summer. The hotel’s redesign is part of a $2-billion global investment by the brand’s owners and franchisees. As part of a $50-million renovation, the four-star Mount Washington Resort in Bretton Woods, N.H., will unveil an additional 20,000 square feet of meeting and event space this December. KSL Resorts completed a $150-million transformation of the Hotel del Coronado on San Diego’s Coronado Island. Its centerpiece is the new Beach Village at The Del, dubbed an “ultra-luxury resort within the resort.” The Westin St. Francis, San Francisco, launched a $40-million restoration project, scheduled to be completed next spring. It is the largest renovation of the historic property since the Great Earthquake of 1906.
