Hotel & Motel Management - July 7, 2008 - (Page 29) www.HotelMotel.com/digital_edition HotelMotel.com | H&MM July 7, 2008 Design REFRIGERATORS 29 New lobby designs for guests on the go Refrigerated grab-and-go cases are a major part of Courtyard by Marriott’s new lobby design, which recently debuted at the Courtyard Fairfax Fair Oaks (Va.). As all Courtyard lobbies go through a major “redefinition,” the Courtyard Fairfax design focuses on making the lobby a social gathering place with WiFi, adult beverages and graband-go foods and drinks. In The Market, a revamped convenience store-style section, healthy foods take center stage. “The biggest trend we are seeing is people going for healthier options. It is a trend, not a fad,” said Eloise Sanchez, CFRST market manager, Marriott International. As a result, several doors of refrigerated cases in The Market section soon will include yogurt and granola parfaits, salads, fresh fruit cups, nutritional waters, iced green and black teas and fresh-squeezed juices. Traditional items, such as sodas and sandwiches, also are offered in the cases. In the dry grocery section of COURTYARD FAIRFAX FAIR OAKS The Market, healthy options like trail mix, Smart Food popcorn, granola bars and power bars are popular. “There is a healthier snacking trend and a trend toward nuts, such as roasted almonds,” Sanchez said. Grab-and-go benefits Additional food-andbeverage revenue. Offering bottled water, fruit and other items, will not poach sales from other restaurants and cafés on site. Added convenience for guests. Someone who is buying a magazine or a coffee will appreciate the ability to buy a snack or meal, such as a sandwich. Increase loyalty and traffic. After guests experience the convenience, they likely will visit the store or café again to buy additional products.
