Through Sept. 9, guests need simply to show proof of an additional airline baggage charge upon check in at any one of Kimpton’s 43 hotels in the U.S. and Canada and a room credit will be issued in that amount, up to $25, offsetting the pass-along cost to air travelers. organic coffee ASHLAND SPRINGS HOTEL Some like their coffee with a little cream and sugar, others like it black, and now, certain hotels like it green. Organic coffee is better for the environment and (arguably) better tasting. But is it a better value? Michelle Glass, food-and-beverage director for the Ashland Springs (Ore.) Hotel, said she pays $1.50 more per pound for her local, organic coffee. “Besides increasing price [by a quarter], controlling waste is the only other way to offset costs,” Glass said. Her workers brew exact amounts for specific times of the day. Steve Pinetti, senior VP of sales and marketing for Kimpton Hotels, keeps the cost for the guest and the hotel the same—by staying local. “One of the biggest issues of going green is stamina and sustainability of the drive to search out these products from local or boutique operators,” Pinetti said. “We’ve always been able to find someone with a price equal to or less than a non-organic product.” Pinetti said Kimpton also tries to cut deals with local distributors offering other products. “Maybe you can leverage the pricing with coffee because you’ll work with [the delivery service] in other areas,” Pinetti said. The Eco-Tour Chicago Package at the InterContinental Chicago includes one-night deluxe accommodations as well as a one-day bicycle rental for two, a one-day guided tour of some of Chicago’s most storied neighborhoods, fresh eco-friendly fruit and a bottle of biodynamic wine. Trump International Hotel & Tower New York announced a master class with one of the world’s most famous chefs, JeanGeorges Vongerichten. The Jean Georges Culinary Master Course includes a private, two-hour cooking demonstration by Vongerichten in the kitchen of his namesake restaurant. The experience also includes accommodations in an Executive Park View Suite, breakfast for two daily at Nougatine and a threecourse dinner for two at Jean Georges with a bottle of Champagne. Organic coffee: liked by environment, liked by guests Organic coffee might cost more, but it may be a loss worth taking if guest reaction is any indication. Michelle Glass, food-andbeverage director for Ashland Springs (Ore.) Hotel, regularly hears positive comments about their coffee, which never used to happen. “Guests are much more sophisticated today about single origin coffee, coffee preparation, working conditions and … where the workers and growers come from,” she said. Wyndham Hotels and Resorts raised its price of coffee by a quarter after going organic, but the brand has received nothing but positive feedback. “Guest are happy to pay that because you have a quality coffee,” said Fernando Salazar, VP of food and beverage for Wyndham Hotels and Resorts. Steve Pinetti, senior VP of sales and marketing for Kimpton Hotels, said putting up signs also adds to the guests’ enjoyment. “People like stories, so whether you’re talking about the history of a building or the lifecycle of the coffee bean, people will stop and read that,” Pinetti said. WYNDHAM Location, location, location When switching to organic coffee, location is everything. There are two philosophies on where to begin: Start in the restaurants. Using organic coffee in the restaurants or coffee bars allows you to raise the price and offset the cost. Providing it in the complimentary continental breakfast may be too much of a burden. Start in community spaces. It is usually easier to launch programs in the hotel first. Put organic coffee in the lobbies, meeting rooms and banquet areas, brewing the correct amounts during the day to avoid waste.
