The bags feature one-way valves. This feature, he said, allows the carbon dioxide of the beans to escape, but does not allow oxygen to get in, thus ensuring up to two weeks’ freshness. Robert Cole, marketing director of Royal Cup Coffee, said today’s packaging for in-room and bulk coffee allows the product to stay fresh and dry. “The film material we use in our packaging also acts as a barrier to other odors in the room,” he said. According to Brian Bradley, senior director of product development for S&D Coffee, the keys to freshness are protection from light, heat, oxygen, foreign odors and moisture. “Moisture protection is especially important related to storage of powdered products such as cocoas and cappuccinos,” he said. “These products are very hydroscopic, meaning they have a propensity for absorbing moisture that will hasten product staling, as well as inhibit proper product delivery through dispensing equipment.” ROYAL CUP COFFEE check IN Hotel Palomar, San Francisco, launches the Weekend Sommelier program. Brian Bradley, senior director of product development for S&D Coffee, said that in-room coffee service can sometimes be a challenge for housekeeping because the storage carts typically have just one bin for replenishment. “If storage bins are not completely emptied [and then] refilled with additional supplies, there can be product that is not properly rotated, and can become quite old prior to being placed within a guestroom,” he said. “It is important to store all products in a clean, dry location prior to placement within guestrooms, and for service personnel to ensure a first-in, first-out rotation.” Cleanliness is part of good maintenance Brian Bradley, senior director of product development, S&D Coffee, stresses cleanliness as essential to proper brewer operation at the inroom and foodservice levels. “Coffee servers should be cleaned following each use, and improperly functioning brewers should be replaced by the property,” he recommended. “In addition, tea brewers and dispensers, as well as juice dispensers, must be cleaned and well maintained in order to ensure delivery of premium quality beverages.” Proper cleaning of coffee makers is essential to coffee quality, according to Brian Bradley of S&D Coffee.
