But within those locations, unless it is placed in the perfect spot, its production quality can be drastically diminished. “Ice machines should not be located near a heat source because it will cause the unit to work hard to produce ice and may decrease the life of the machine,” said Julie Hausmann, senior marketing manager at Hoshizaki America. Additionally, she said, the quality of the ice will be lessened, resulting in smaller, softer and fastermelting ice cubes. The coolest thing to hit your floor, just got quieter. The machine also must be cleared from areas with debris, Toth said. For example, it should be kept far from any area in which bread is made. “One would need to clean the ice machine and its air filters more often if it’s placed directly next to an area where bread is baked, due to the yeast entering the ice machine and causing slime build-up,” she said. To avoid safety hazards, keep the machine as close to where the ice is being used as possible, and try to place it near a floor drain, Hausmann said. “You want to avoid any moisture or slip hazard, and keep the area sanitary and safe,” she said. For employee ease, Toth said there should be enough space available for a cart to maneuver around the front of the ice machine during banquet services and for cleaning and routine maintenance.
