Luxury Hotelier - April 2008 - (Page 44) 44| Indulge Bringing London to Hollywood As The London West Hollywood (www.thelondonwesthollywood.com)— formerly the Bel Age Hotel in West Hollywood, California—celebrates its reopening this month, celebrity chef Gordon Ramsay (www. gordonramsay.com) prepares for his West Coast restaurant debut, Gordon Ramsay at The London West Hollywood. The restaurant, which is a sister restaurant to Mr. Ramsay’s twoMichelin-starred Gordon Ramsay at The London in New York, will open in June. The restaurateur adapted his signature style, with several menu offerings inspired by California’s fresh produce. The restaurant will feature a changing menu of market specials, à la carte items and a three-course lunch menu and six-course tasting menu for dinner. The cuisine will be Western European with Asian influences. Chef de Cuisine Andy Cook, who previously led Gordon Ramsay at The Conrad Tokyo, will head the kitchen at The London West Hollywood, and Executive Chef Josh Emett of Gordon Ramsay at The London in New York will help oversee the menu. Trendy dining Andrew Freeman & Co., a hospitality and restaurant consulting firm, released a list of culinary trends for 2008. Artisan salt Australian olive oil, honey, fruit pastes and seafood Offering full-scale dining room menus and innovative bar menus in lounge and bar areas Small-plate meals Chefs making everything in-house Chefs growing their own produce Cupcakes as desserts Small, medium and large portion options Four-star cuisine and service in a casual atmosphere Offering menu items in retail form Stars in the kitchen MGM Grand at Foxwoods (www. mgmatfoxwoods.com), slated to open in May in Mashantucket, Connecticut, will bring with it celebrity chef dining experiences blending the guest experiences at the MGM Grand and Foxwoods Resort Casino. Chef Michael Schlow will lead Alta Strada at the MGM Grand (www. altastradarestaurant.com), a 225-seat Italian restaurant, while Tom Colicchio will bring Craftsteak to the MGM Grand, a restaurant featuring steaks, fish, shellfish and seasonal side dishes. Foxwoods Resort Casino (www. foxwoods.com) underwent a $55-million renovation to enhance its retail and culinary options, including two new restaurants by David Burke [right]: David Burke Prime, a 13,000-square-foot, 280seat steakhouse, and the 2,700-squarefoot Burke in the Box, offering gourmet sit-down or take-out food.
