For ala carte dishes, it’s great to give something freshly made an “à la minute” twist, like a mousse, fool or ice cream. Mr. Ortiz: The hot kitchen items right now are Rational ovens (www.rationalag.com). Mr. Frechon: To me, the induction plate is the better tool because it allows for precise cooking. Chef Eric Frechon Mr. Frechon won the prestigious Meilleur Ouvrier de France title in 1993, awarding him the title of “Best Craftsman in France.” Now chef des cuisines at the Hotel Le Bristol in Paris, Mr. Frechon’s culinary career has included posts at the Hotel Byblos Andaluz in Mijas, Spain, and Paris’ Hôtel de Crillon. He opened his own restaurant, La Verriere d’Eric Frechon, in Paris’ 19th arrondissement in 1995. Chef Kerry Simon SIMON LA, Mr. Simon’s signature restaurant at the newly redesigned Sofitel Los Angeles, follows his opening three years ago of Simon Kitchen + Bar in the Hard Rock Hotel and Casino in Las Vegas. During his career, Mr. Simon has held positions at The Plaza Hotel’s Edwardian Room in New York City; South Beach, Miami’s Raleigh Hotel; and the Prime Steakhouse in Las Vegas’ Bellagio. For breakfast, most hotels give small, individual honey jars. I wanted to find the actual honeycomb for my guests. I’ve done that, and it adds that little bit of luxury. Mr. Ortiz: Luxury is not a standard or an adjective; it is a way of life. It is a combination of pleasure, comfort and taste in all surroundings. Culinarily speaking, luxury is the sum of fine and exotic ingredients, elegantly set and decorated, perfectly combined to create love at first bite. Mr. Frechon: Luxury means taking the best part of every ingredient and matching it with a counterpart to bring out the best possible taste in all products. I like to compare my cooking with haute couture. The better quality of ingredients that go into it, the better it will be.
