At the Sugar Mill, we dined on fresh Red Snapper, though Executive Chef Vito Chan’s tasting menu is said to be the best way to experience the restaurant’s Carib-Asian cuisine. However, our favorite dining experience at Little Dix Bay JUNIOR SUITES provide views of the Caribbean and have spacious, private terraces. consisted of a private torch-lit beach dinner outside the Sugar Mill by the light of a full moon. Our very own wait staff saw to it that our plate was always full, our glass never empty. Reservations can be made upon arrival, or even the desired day of dining. After an exhilarating morning hike up Cow Hill Trail (beware of the bugs, which were out in full force during our springtime visit), we sought solace in a Seaside Sedation treatment at The Spa, Little Dix Bay’s hilltop sanctuary, whose outdoor relaxation area is complete with a two-tiered clifftop infinity pool and Jacuzzi. Be sure to book the Cliff Spa Suite, which has space for indoor and outdoor wet and dry treatments, as well as a dining area and whirlpool. Book spa treatments a week in advance, but allow extra time during the holidays. If guests want to explore offsite, ask Guest Services Manager Dahlia Marks (ldbconcierge@rose woodhotels.com; 284-495-5555) to arrange a full day of beach drops complete with swimming and snorkeling at the island’s breathtaking Baths (clients should make this stop early in the day, before cruise passengers arrive).
