Temperature Profiling within Conveyor Oven Temperature profiling can be a key to energy efficiency. Branson says, “In food applications, operators of conveyor ovens want to hit the product with higher temperatures in the beginning of the process. We suggest checking oven temperatures at the finishing end of the cycle. Often they can be reduced, with no loss in process speed.“ Branson feels that it is usually not practical in the food industry to increase the insulation level of existing ovens. But, he says, in this industry energy savings from process improvements are often more significant than reducing oven heat losses. “Temperature profiling and process improvements are the real opportunities with existing food industry ovens.” Reusing Oven Exhaust Heat Branson notes that energy reutilization is also getting increasing attention in the food industry. Oven exhausts are often a good source of thermal energy that can be used internally for oven heat, or can be used in driers or other food processing equipment. Today’s gas-fired ovens usually feature electronic controls. These are an important improvement from an efficiency standpoint because they prevent temperature over-shoot, and offer more precise control. The oven can be programmed to shift from full operation to standby status automatically. These controls also permit variable frequency drives to slow oven exhaust blowers at different stages in the heating cycle when it won’t affect the process. This reduces the oven’s electric demand and energy usage. Quick Paybacks for Oven Replacement He notes that although food-service ovens may have a functional life of 20 to 30 years, owners should consider earlier replacement. “We commonly see a payback for a new oven from energy savings alone of from one to four years. When you take into account higher productivity with newer designs, and reduced downtime, the payback can even be shorter.” He explains that Aeroglide today offers high-velocity impingement convection ovens that shorten the baking cycle, thus increasing throughput and reducing energy usage. Newer oven designs normally will fit within the footprint of older ovens, and will increase productivity with lower energy use. Perform Complete Oven Evaluation In evaluating the energy patterns of your industrial oven application, the key is to closely evaluate present and future process oven requirements. Use existing oven features such as a standby heat mode, and oven door switches, and if the oven is not so equipped, look into having these features installed. Consider replacing the oven with new models that have better insulation, more flexible controls, and heat recovery capabilities. Energy costs are increasing, but fortunately so also are opportunities for oven energy saving.
