he cattle drives of the
Old West were often
long, hot and dry. The one
thing that kept the cowboys
happy was the “chuck.” How
long the chuckwagon cook
lived depended on how well
he cooked. While the hands
were working the herd,
the cook was preparing a
supper of slow-roasted beef,
scrubbed potatoes, chunky
applesauce, a pan of sweet
spice cake, biscuits the size

when you visit one of the area’s chuckwagon supper shows.
of small boulders and the
daily mainstay – beans.
Tin plates in hand, the
tired and hungry cowpokes
filled their bellies
and topped off with plenty
of strong campfire coffee.
Before they got too relaxed,
“Cookie” would remind
them to clean up, and they
would slowly return their
utensils to the chuckwagon.
Soon, fiddles and guitars
would find their way to the
campfire where songs of cool
water and loneliness would
waft through the moonlight.
You can capture the same
Old West experience at any
of the area’s chuckwagon
supper and shows. The fare’s
authentically the same,
the music and humor are
decidedly Western. Circle B,
Flying T and Fort Hays – all
near Rapid City – are the
modern-day chuckwagon
supper outfits. Custer State
Park also offers a venue
that includes a hayride
and a steak fry, as well as
Back Country Wagon Trips
located in Custer.
