Food Refreshing summer food Summer Recipes During the heat of the summer, there’s nothing more refreshing than a meal made with fresh foods served cool or at room temperature. There’s no reason to turn on the stove when delicious food can be prepared without cooking with heat. In addition to saving energy and tasting great, these recipes are healthy as a bonus. Who could ask for more? SHRIMP, AVOCADO AND FRUIT SALAD YIELD: 4 portions 1 fully ripened Mexican avocado, halved, pitted and peeled 3 cups bite-sized salad greens 1 mango, peeled, pitted and cubed (about 2 cups) 1-1/3 cups seedless red grape halves 1/2 cup prepared orange-flavored salad dressing (from an 8-ounce bottle) 1 pound cooked shrimp, peeled and deveined 1 lime, cut in wedges Cut avocado in thin wedges. In a large bowl, toss greens, mango and grapes with half of the salad dressing. Arrange avocado and shrimp on top; drizzle with the remaining dressing. Serve with lime wedges.
