Bruscetta
Serves 7 to 10

IngredIents
For tomatoes:
2 pounds Roma tomatoes
2 cloves garlic, finely minced
5 basil leaves, sliced into
thin strips
2 teaspoons balsamic vinaigrette
Salt and pepper, to taste
For bread:
1/2 loaf Italian bread
(about 7 to 10 slices)
Butter, softened
dIrectIons
1. Preheat oven to 350 F.
2. Quarter tomatoes, pull all
seeds and pulp out of middle
with fingers and discard so only
meat of tomatoes is left.
3. Chop tomatoes up into small,
bite-sized pieces.
4. Transfer tomatoes into
medium bowl and add garlic,
basil, balsamic vinaigrette
and salt and pepper. Set aside
in fridge.
5. Slice Italian bread into
1 1/2-inch slices.

6. Spread softened butter onto
both sides of slices and place
slices on baking sheet. Bake for
10 minutes.
7. Remove bread from oven and
flip slices over. Bake for 5 more
minutes or until golden brown
on both sides.
8. Spoon tomato mixture onto
each slice of bread.
9. Top it off with basil and
Parmesan cheese.

Mamma's Meat Sauce |

Serves 6 to 8

IngredIents
1 can crushed red tomatoes; 1 can pureed red tomatoes;
1 can tomato paste; 1 small package ground beef; 1/2 onion, finely
chopped; 1 large spoonful sugar; 1 spoonful garlic, minced; Basil, to
taste; Parsley, to taste; Salt and pepper, to taste; Olive oil
dIrectIons
1. Coat bottom of large sauce pot with olive oil.
2. Add minced garlic and finely chopped onion to pot. Turn stove heat to
medium-high and cook until soft.
3. Add ground beef to pot and cook.
4. Once beef is fully cooked, add crushed tomatoes, pureed tomatoes
and tomato paste. Stir well.
5. Add parsley, basil, salt, pepper and a spoonful of sugar to sauce.
6. Bring sauce to light boil and stir for 30 seconds and then bring down
to low heat.
7. Cover pot and leave on low heat for 4 to 5 hours, stirring occasionally.
