Grits Cakes
InGredIents for 2
1 1/2 tablespoons unsalted
butter; 2 tablespoons
chopped onions;
1/2 teaspoon fresh
chopped thyme;
1/2 teaspoon minced
garlic; 2 1/2 cups whole
milk; 1 cup shredded
cheddar; 1/4 cup of grated
Parmesan cheese;
2 tablespoons vegetable
oil; 1/2 pound of large
shrimp, peeled, deveined
and tail off; 1/2 teaspoon
chopped garlic;
1/2 teaspoon Old Bay
seasoning; 2 ounces cream
sherry wine; 12 ounces
Alfredo sauce (store bought
is fine); 1/4 cup chopped
bacon bits; 1/4 cup sliced
scallions; 1/2 cup shredded
cheddar cheese; 12 ounces
grits; 1 cup seasoned flour

1. Melt butter in a 2-quart stock pan on medium heat. Add onion
and sauté for two minutes. 2. Add garlic and thyme and sauté for
an additional minute. 3. Add milk and stir in grits, bringing them
to a simmer for 3 to 4 minutes. 4. Remove from heat and stir in
cheese until grits begin to thicken. 5. Pour into an 8-inch-by-4inch Tupperware container and place in refrigerator until cool.
6. Once cooled, remove container from refrigerator. 7. Flip
upside down to remove the grit cakes. 8. Using a knife, cut
once down the middle length-wise and three times width-wise,
creating 2-by-2-inch squares. 9. Heat oil in a 12-inch skillet.
10. Dredge cakes in the one cup of seasoned flour, coating
both sides. 11. Place cake in heated oil for 1 minute on both
sides or until golden brown. 12. Remove from pan and place on
paper towel and drain off excess oil. 13. Heat oil in a large sauté
pan. 14. Add shrimp and chopped garlic in
pan over medium heat and sauté for two
minutes. 15. Deglaze pan with cream
sherry wine. 16. Add Alfredo sauce, Old
Bay seasoning and Parmesan cheese.
Stir until well incorporated. 17. On a
separate plate, stack the cooked grit
cakes in a pyramid fashion and ladle
the shrimp over the grit cakes.
18. Garnish with bacon bits, cheddar
cheese and scallions.

soda water; 1/8 cut of
orange; 1/6 cut of lime

1. In an 11-ounce glass,
add fruit and ice. 2. Add
peach schnapps and
wine. 3. Stir and add a
splash of soda water.
