A wobbly loaf that is pale in color with an underside flecked by tiny dots indicates it was baked in an industrial oven. Breaking the loaf apart, you should find a creamy-colored inside with large, irregular air holes (industrial loaves are bleach white with small air holes); the texture should be somewhat chewy and the flavor rich and almost nutty.
