Moroccan cuisine plays subtle variations on a few basic themes, notably bstilla (pigeon pie with a flaky sugared pastry crust), tagines (slow-cooked stews of lamb or chicken with spices, almonds, and fruit), couscous with vegetables or fish, and mechoui (slowroasted lamb), all traditionally eaten with the fingers, using flatbread as a scoop. These five restaurants are located in the old city, and all serve multicourse meals with wine in palatial settings, accompanied by local musicians and belly dancers.
