Its attack in the mouth is fresh and clean, with nice intensity.” Georges Blanc’s provincial retreat in Vonnas, just north of Lyon, is a pilgrimage stop for gourmands. I’ve used the charming hotel as a base for exploring the nearby Beaujolais region as well as Greater Burgundy, and the restaurant is among the best in France, sporting three Michelin stars. As the house sommelier, Sommier holds a coveted and well-deserved Meilleurs Ouvriers de France award for his mastery of the craft of serving wine. “I serve this Mâcon Azé at around 50 to 53 degrees Fahrenheit and do not carafe it,” remarks the sommelier. While noting that the wine’s freshness and elegance make it ideal on its own, Sommier recommends pairing it with the justly famed local Bresse chicken, a Georges Blanc specialty, or with dry goat’s-milk cheeses.
