Senior editor JUSTIN PAUL braved the heat of the kitchen and teared up over onions for his feature on cooking vacations (“Dinner with Florence,” page 86). “Spending a week with Tuscan chefs should rank high on any gourmet’s list,” he says. “You’ll learn the classics, improve on those you know, and pick up a few new twists – then you step outside to the restaurants and culture of Florence. Just be forewarned, you’ll owe a lot of people dinners when you return.” Paul’s recent travels for the magazine include a road trip along Croatia’s Dalmatian coast. Restaurant critic JUNE NAYLOR reveled in discussing favorite local food haunts with noted chefs around the nation (“The Chef’s Table,” page 103). “Chefs and restaurateurs must choose carefully where to eat in their scarce moments away from work. Like them, I’m always intent on finding food made with integrity.” Naylor has written for Sunset and Texas Monthly, and is the author of numerous books, including the cookbook The Texas Cowboy Kitchen. French-born photographer FREDERIC LAGRANGE (“Edge of the World,” page 134) moved to New York City in 1996 to work in fashion photography and has since documented life ranging from the grit of the city to Indonesia’s pristine islands. “Of all my travels, Patagonia feels like one of the most untouched parts of the world I’ve visited,” he says. “People you meet there have a healthy outlook and approach to life.” Lagrange has shot features for Travel + Leisure and Condé Nast Traveler, and frequently contributes to GQ.
