Virginia Wine & Oysters by Patrick Evans-Hylton ` Rappahannock River Oysters, Topping About the Writer Patrick Evans-Hylton, a Johnson & Wales University trained chef, is a Norfolk, based food journalist, historian and educator. He is food editor of Coastal Virginia magazine, executive editor of Virginia Wine Lover magazine, and author of the cookbook "Dishing Up Virginia." His work has appeared in print, television and radio since 1995. 34 It was one of those perfect days when the sky - a dark powder blue - was spotless except for a lazy sun throwing rays my way, and the occasional wisp of a cloud just passing through. I sat outside Merroir, a small restaurant in the small town of Topping at a table under a tall tree looking across the Rappahannock River, just yards away, gently lapping at the shoreline. A glass of wine was brought to me; straw-hued and fragrant with some floral notes. The Barboursville Vineyards Sauvignon Blanc washed across my tongue. Citrusy, green, bright. A long finish. Crafted near Charlottesville by Luca Paschina, the vintage is a wonderful warm-weather wine and a perfect pair for what else I am here for: oysters. Merroir is owned by the Rappahannock Oyster Company. The company, with origins back to 1899, is run today by the founder's great-grandsons Travis and Ryan Croxton, recipients of Food & Wine Magazine's Tastemaker's Award in 2005. With the deep-cupped bivalve in hand, the shell raised to my lips, I slurped down the flesh. Sweet, creamy. A hint of salt. Clean sea taste. The wine is an amazing accompaniment. Each component was wonderful and stood on its own. And while Virginia wine and Virginia oysters are both making quite a name for themselves, together they are doing remarkable things.
