GLAZED HAM
Serves 8-10
1 x 4.5-6.5kg raw gammon
250ml red wine
1 onion, halved
2 garlic cloves, unpeeled
1 fennel bulb, halved
2 star anise
1 tbsp coriander seeds
1 tbsp fennel seeds
1 tbsp black peppercorns
For the glaze:
20 whole cloves
8 tbsp redcurrant jelly
1 tsp ground cinnamon
2 tsp paprika
1 tsp red wine vinegar

Put all the ingredients,
except those for the glaze,
into a large saucepan and add
enough water to cover the
gammon. Bring to a boil, then
reduce the heat to low and
partially cover with a lid. Cook
for 3- 3½ hours until the
gammon is cooked through,
occasionally skimming the
white froth from the top of
the pan.
2 Preheat the oven to
200°C/180°C fan/gas mark

pan and allow to cool slightly
at room temperature. Use a
sharp knife to strip off the
rind and a bit of the fat layer
if it is thick. Score a diamond
pattern into the remaining fat
and stud each corner with a
clove.
3 Whisk together the glaze

over a low heat and bring to a
boil for five minutes until thick.
4 Place the ham in a roasting
tin lined with tin foil. Pour
over glaze and roast for 15
minutes. Remove the oven
and cool at room temperature
for about 2-3 hours before
carving.
