The body absorbs micellar casein much
slower than whey. Other animal-derived
proteins include egg albumen, beef protein isolate and chicken protein isolate.
Similar to dairy proteins, these animal
proteins are a source of all essential
amino acids. Some drawbacks to consider include egg albumen's sulfur-like
flavor and the characterizing color and
flavor of beef and chicken ingredients.
When it comes to plant proteins,
soy ingredients are the most
common. Isolated from soybeans and
concentrated to varying levels, soy
proteins are recognized as a low-cost
protein source. Soy protein contains
all essential amino acids; however, they
are not as readily absorbed as whey
proteins nor as effective in muscle
protein synthesis. Drawbacks to soy
proteins include being an allergen,
having a beany taste and possessing
high levels of isoflavones, which are
hormone-like compounds with uncertain
impacts on the human body.
The two plant proteins gaining traction
are pea protein isolate, which is
extracted from yellow peas, and rice
protein. Both contain all essential amino
acids; however, some of the amino acids
are low or inadequate for the body to
utilize in an accurate manner. Unlike soy,
pea and rice proteins are hypoallergenic.
From a sensory perspective, the many
varied versions of these proteins range
from highly colorful and flavorful to
neutral and bland.
Emerging protein ingredients include
products sourced from algae and
insects, as well as fruits and vegetables
and their seeds or nuts.
In addition to their functional,
physiological and sensory differences,
proteins vary in their ability for a finished
