new trends research from Mintel.
"Consumers are not the only
influencers, as shifting economics,
natural phenomena and social media
are shaping what, how and where
consumers are choosing to eat," said
Jenny Zegler, global food and drink
analyst at Mintel. "The trends will
play out differently across the world
based upon a variety of factors,
including cultural norms, regional
availability and societal needs.
In some cases, established trends
from one area are migrating to
new regions, while a few emerging
trends have the potential to disrupt

the worldwide landscape."
Jimenez Foods, which operates
several popular panaderías across the
city of Chicago, offers numerous
examples of how to achieve such
desired results by incorporating
flavors into products using easy-touse methods.
Niños envueltos are jelly rollstyle pastries that are extremely
popular in many parts of Mexico.
In Chicago, Jimenez Foods takes
the traditional pastry a notch up
by adding an accent on the top of
the bakery product, using either
a decorative chocolate piece or a
dollop of whipped topping with one
maraschino cherry.
