make many kinds of breads, and we change the varieties
several times a week. That's what keeps customers coming
back - keeping everything nice, clean and in good shape."
His retail store is spotless, and great care is taken to
keep the six shelves inside the bakery case stocked full
with fresh product. The case holds 48 trays, and customers
enjoy being able to choose from a wide selection every day.
The bakery specializes in products that appeal to a
variety of cultures of customers.
There are Danes filled with Bavarian cream, oversized
pinguinos, mantecadas with whipped topping and a cherry
in the middle, and conos made with either browned,
crystallized sugar on top, or powdered sugar. To caramelize
the sugar, they place each of the conos in the oven for
several minutes.
Another of their specialties is called a ballena. These
are prepared just like donuts before being cut in half
and filled with vanilla custard in the middle. Some have

powdered sugar, while others have chocolate frosting
and sprinkles on top.
"A lot of people buy ballenas, especially for their kids,"
Segura says. "When a little kid starts eating a big piece
of bread, it's an incredible feeling of satisfaction to see
the joy in their eyes."
Guillermo Segura is among a growing number of
bakery owners to utilize Facebook to promote his business,
and it is working quite well. "I notice from my customers
that they use Facebook often and they post very good
comments about my bakery." His staff will post photos of
fresh bread or hot tamales ready at the bakery, creating
a buzz among their customers. "Not only do Mexican
people buy tamales, but everybody buys our tamales. We
make 100 dozen to 150 dozen per week."
Likely because of Facebook, he estimates nearly 40
percent of customers are non-Hispanic. "Maybe we should
our name to International Bakery," he says, smiling.
