restaurant jobs while they built up momentum toward
opening the bakery.
"Then we quit our jobs before we opened our store,"
Jhovany says. "At some point, you just have to make a
decision. It was scary, but we knew we were going to do
it. It was hard, but it was worth it."
They found a great location in Aurora, which enjoys
a rapidly growing population, and started hiring bakers
with lots of experience.
Once word started to spread about their unique Spring
Fling Cake, the crowds started rolling in. The bakery
started by sampling the cake to every single customer
who walked in the door, offering each small portion in
a paper muffin cup with a spoon.
They also relied heavily on social media by creating
a Facebook site for their bakery and posting five to six
times each day, featuring their newest and most creative
cake decorations.
"Facebook helped us a lot," Jhovany says. "We were
so busy doing cakes from the very start that we had to
stop doing breads. We sell out every weekend." In only
a year, Pasteles Cisne averages sales of several hundred
cakes per week, and more during the holidays.
Cakes and pastries have become the centerpiece of
the bakery, as they continue to refine their menu choices
based on customer demand. What they quickly found
is that consumers love lots of fresh fruit on their cakes.
"People really like the cakes with fruit. There's lots of
flavor," Jhovany says. "Over a year, it's hard to get some
fruits at certain times of year, so we try to introduce
different cakes based on what fruits are available."
Mangoes, strawberries and kiwifruit are the most
popular fresh fruits they use. Jhovany estimates that on a
weekly basis he buys 20-30 cases of fresh mangoes, 20-30
flats of fresh strawberries and 10 cases of fresh kiwifruit.
"From BakeMark, we buy whipped topping, cream
cheese, flours, sugars and glazes," he adds. "We are
committed to high quality, and I really like working

everything for us. Their customer service is exceptional."
