The menu starts at breakfast with steel-cut oats with
Italian jam, baked eggs in a spicy tomato sauce and
cornetti sandwiches made with prosciutto cotto
and fontina. At lunchtime, the menu offers soups,
salads, focaccia sandwiches, pizza, and hot entrees.
Afternoons expand to a wider selection of Italian
cakes, tarts and other desserts, like Tiramisu.
The two ovens are the focal point of the space, with
fresh baking onsite throughout the day. A brightlylit food case stretches along the width of the space,
enough for a visual landscape of freshly baked
cornetti, brioche and focaccia, pizzas, salads and
desserts. Commessas, Italian for "shop assistants," act
as a guide through the journey of food.

widespread popularity in sandwich breads. One of the
most popular ancient grains is quinoa.
Quinoa originated among the Incas in Peru and
Bolivia. Quinoa farming is better suited for a cooler
climate, such as that in the Andes mountains and the
Canadian plains. Denver-based Ardent Mills works
with growers in Saskatchewan, Manitoba and Alberta
through its "Great Plains Quinoa" program.

momentum, largely driven by the supply assurance
and predictable pricing that comes from growing in
