At the beginning of the year, everyone tries to start off with
a clean slate. However, this year, it might be a good idea to
take a bigger view of New Year's resolutions and overlay the
concept of leadership and managing sanitation in the baking and snack industries. After all, now is the time of year
that resolutions have a tendency to fail. But with the right
leadership and foresight, resolutions, as well as sanitation
strategies, can stay top of mind.
Baking &Snack Editorial Director Dan Malovany talked
about how getting your house in order is more important
than ever in 2016 in a November editorial indicating we're
committed to making sanitation and sanitary design a top
priority in 2016.
Personal New Year's resolutions usually involve the vow
to lose weight, eat better, work out daily or improve relationships. The hard part is trying to keep the resolutions
in focus when you become embedded with the day-to-day
activities in your life. Eating better or exercising daily all of
a sudden becomes a challenge when you have your normal
job stress and family responsibilities. For these reasons,
most of those good intentions have gone by the wayside
by now, and people have returned to their old practices
and habits, losing the critical momentum needed to bring
about change. How can we stick to our personal and professional goals and win for both?
The sanitation/management resolutions made in January can still direct your business today. It just takes determination and an unwavering commitment to your goals.
Achieving them is not always easy. In the beginning, one
step forward is often followed by two steps back. Instead
of trying to reach your resolutions in one fell swoop, a
better solution may be taking a series of stepping stones
to achieve critical success factors that can be executed
through leadership and technical knowledge. These can be
improved methods or procedures that can bring change to
meet a specific objective. With Food Safety Modernization

approaches, now is the
time for bakers to make
sure their 2016 sanitation
resolutions are still in check.

Act (FSMA) regulatory compliance soon approaching in
2016, preventive plans are required to ensure food products meet food safety expectations.
Sanitation typically has responsibility for many of the
FSMA preventive plans needed to ensure food safety. These
are items such as cleaning procedures, master sanitation
schedules, corrective and preventive action plans, pest control, environmental monitoring, allergen cleaning and preop inspection results, to name a few.
These programs are not new for most facilities and already are at some level of implementation. However, the
documentation requirements associated with FSMA are
much more rigorous and detailed than ever before. In addition to having the programs, there should also be diligent
execution according to the procedures with completion at
the prescribed frequency. This is a tall order and will require leadership with program development, documentation and execution.
When we think of preventive plans, it is easier to look at
12 months or 365 days of opportunities rather than just an
annual resolution. It will take daily doses of leadership and
discipline to reach the goal of FSMA compliance.
Dan's comment on reading more about sanitation is
spot-on because of FSMA and the need to meet new
preventive plan expectations. As you evaluate this year's
sanitation goals, be aware that regulatory responsibilities
involved with FSMA compliance will link directly to leadership and program execution.
The New Year brought with it the opportunity to start
fresh - to be dynamic and create a motivational vision
with goals that can carry well into 2016 and meet the critical needs of your business and yourself. It's not too late to
make this the year of sanitation. Just promise every day to
stick to the resolution you made at the start of the year. It
will result in a new beginning - and a better year - for
your company moving forward.
