Bakery Flour
Bookings of bakery flour expanded
last week. Price adjustments were narrow except for soft flour, which was
lowered.
Winter wheat futures posting new
contract lows and spring wheat futures
trading at the lowest levels since late
June encouraged several bakers and
other flour buyers to extend their coverage of the futures component of forward
flour contracts through March with some
also covering futures into the second
quarter of 2018. Individual specialty
bread bakers and other spring grade
users also extended spring wheat basis
coverage into the first quarter.
With futures coverage increasingly
extended well into 2018, more bakers
were considering extending basis coverage through the end of 2017 and into
2018. Millers pointed out that especially
spring wheat premiums remained at historically good values and suggested there
may be more upside risk in first-half 2018

basis values than in futures.
Bakers who flat-book their flour also
were active last week, extending coverage in both the fourth quarter of 2017
and the first quarter of 2018.
A number of bakers who already
covered the futures component of October-December flour contracts were eyeing the calendar and beginning to cover
whatever components were required,
mostly millfeed, to complete the contracts. As a result, flour coverage for the
fourth quarter expanded to about 60%.
Coverage was slightly more extensive in
spring grades and soft flour than in pan
bread flour, one miller observed.
Mill grind was strong and averaged

But the increase was not great. Volume
was expected to begin to expand seasonally in the next several weeks as the key
fall baking season approaches.
The recent break in wheat futures
encouraged additional buyers of private
label flour to extend contract balances
through the end of the year. That supply
would see them through the baking

Semolina
Bookings of semolina, granulars
and durum flour were steady but not
heavy last week. Prices were lowered.
The price of choice milling hard amber durum as quoted at the Chicago gateway for delivery beyond was a nominal
$10.25 a bu, down 75c from the previous
week and the lowest since early July. The
Minneapolis price was $9.95 a bu.
Cash trading of durum remained
lacking with mills continuing to sustain
operations at six days a week using
existing inventories and previously
purchased durum being shipped for
application against contracts. The price
weakness reflected declining prices of
other wheat classes.
Pasta manufacturers added steadily
to their fourth-quarter semolina coverage, which was estimated at about 70%.
Durum millers indicated the quality
of the new crop samples analyzed to date
was very good with regard to protein and
color, but test weights were running light.
The U.S. Department of Agriculture
indicated the Montana durum harvest
was 50% completed by Aug. 13 compared
with 20% a week earlier and 22% on the
same date last year. The North Dakota
harvest was under way, but the U.S.D.A.
has yet to issue a progress estimate.
The North Dakota Wheat Commission commented, "Early harvest reports
indicate yields that are below average
and well below last year's levels. In
Montana, conditions are worse with over
two-thirds of the crop rated in poor to
very poor condition. About half of the
crop has been harvested in Montana,
well ahead of average. The harvest is being pushed along by hot, dry conditions
and low yields." FBN
