Each Expo advanced the methods and materials available to commercial, wholesale bakers. During
the 1980s, retail equipment, bakery
mixes and frozen thaw-and-serve
products joined the milieu. Tortilla
technology joined the event in 1993,
and in 2013, pizza systems will enter
the scene.

and unstackers. Pneumatic premixing of batched ingredients came
along in 1973. A new generation of
continuous mixing systems was announced in 2007, and a pre-dough
mixer was seen at the 2010 event.
Conveyorized proofing and baking of bread and buns highlighted
the 1967 show, and the equally
revolutionary rotary bread divider
arrived in 1981. Thermal oil heating systems (1993) and serpentine
proofing, baking, cooling and freezing technology (1997) enabled big
gains in efficiency and output for
producers of small cakes and, most
recently, buns. Two other technologies introduced in 1997 were highrise fermentation rooms and stonehearth tunnel ovens.
2001: Many exhibitors explained ways to bring
artisan-inspired breads to the mass market.
Bakers first toyed with computerized processing during the 1970s.
Handheld computers started a sea
change in route accounting when
introduced at Expo ’81. Computerintegrated manufacturing technologies, however, didn’t show real
promise until Expo ’85, where the
first touch-screen equipment control
terminals were introduced. Open architecture software for bakery lines
arrived in 1993.
Robotics, another cutting-edge
technology, moved into the baking
industry thanks to systems introduced at Expo. The first applications were delivery basket loading
systems (1985), followed by robotic
cake decorating lines (2007). At
IBIE 2010, exhibitors featured robotic pretzel twisters and muffin
depanners.

Continuing innovation in bakery
2001: Despite the pall cast by the events of 9/11, exhibitors reported
brisk interest from show visitors.
