replacement for sodium bicarbonate in
the leavening system for cakes, biscuits,
cookies, pancakes and more. It reacts in
a similar way to the sodium-containing
leavener. Because of the difference in
molecular weight, 18% more Flow-K will
be needed to yield equivalent carbon
dioxide release. In cookies, it yields
increased diameter and/or height, golden
brown color and sweeter flavor.
