Artisan Bread
With 60 breads on rotation, from chocolate cherry to white chocolate apricot to sesame semolina, there is

something to make everyone say, “Wow!” in the artisan bread department. All of the breads are baked fresh in-house in state-of-the-art MIWE ovens. “They are extremely well-balanced ovens,” Glasscock says. “So the quality you get from them is unmatched.” All of the bread products are clearly labeled, and sampling is prevalent in the department. “We don’t let customers go through without trying something,” Glasscock says. The bakery is 90% full-service, with stacks of bread behind the counter ready to be sliced. “We try not to pre-package them because both paper and plastic diminish the quality of the crust,” Glasscock says. Half loafs are also available for individuals and smaller families. And as if that weren’t enough, fresh flour tortillas are also made in house using canola oil rather than lard, which helps them stay softer, longer, even after reheating.

And finally, the saying “save the best for last” comes to fruition in FRESH by Brookshire’s pastry department, where jaws drop on a daily basis. There is a special touch added to every product, including the “simple” items like cake icing, which is made with pure butter and no shortening. “It sets us apart,” says pastry chef Jennifer Kuhn. “That’s the commitment we made.” The cake program rivals many retail bakeries’, as specialty threelayer cakes with mousse fillings are the norm—not sheet cakes.
