By drawing in the customer who normally buys similar products from the aisles, you will increase your impulse buys and create repeat customers once they realize the advantages of buying instore deli and bakery products. Packaging and merchandising provide the solution to catching the eyes of
consumers who don’t normally shop the bakery and deli. Shoppers often buy with their eyes first. If a product looks attractive, and a retailer can catch the customer’s eye, the chances of purchase automatically increase. And while the quality of goods is always the most important factor, packaging with appeal provides an in into the psyche of a new or impulse buyer. When purchasing, if the consumer doesn’t find the product attractive on first look, they will move on without much thought.

Impressive growth
According to The Future of Food Retailing, an annual report put out by retail research and solutions provider Willard Bishop, fresh format stores continue to show high sales growth. Willard Bishop defines fresh format stores as “stores that emphasize perishables and offer center-store assortments.” The report states that fresh format stores continued impressive sales growth of 11.4% to $10.4 billion in 2011, proving that shoppers still look for fresh, healthful products. Accordingly, this store format should enjoy strong sales performance in the foreseeable future.
